Neil Perry

Neil Perry's pan-fried ocean trout with creamed lentils!
This amazing recipe is from good food by Neil Perry and my favourite part about it is the creamed lentils.This recipe is great the way it is, however I always leave out the bacon and use vegetable stock instead of chicken. I also tend to add a bit more thyme, basil, chives, and sometimes extra fresh lemon juice too. Neil Perry's recipe also calls you to process part of the dish to form a puree that will be mixed with the remainder of the dish, I usually don't bother with this step and it still tastes fantastic. On top of these tweeks you can also use coconut cream instead of normal cream and skip out on the butter to make a beautiful vegan lentil dish.
Another amazing recipe from the good food book is the crispy skin salmon with braised chickpeas and herbed yoghurt. The chickpea dish is so simple and easy to make and can serves as the perfect accompaniment to many proteins. Like the lentils, it is a great staple dish for vegetarians and vegans as chickpeas provide a good source of dietary fiber, potassium and protein. The herbed yoghurt packs a real zing with the lemon which freshens up the whole dish and is exactly what you want especially when you are having fish.
